I went to a party like that once and the hostess had baked potatos. She baked them and put them in a cooler so they would stay hot. She had salsa, cheese, sour cream, pretty much anything you can think of putting on a potato. Everyone got in line and made their own. I thought it was a pretty neat idea.

I LOVE the Sloppy Joe idea
Here's my recipe. I call them Untidy Samuels
Probably more widely known as Sloppy Joes, these can be made with ground beef or ground turkey. This homemade version is light years ahead of anything you can buy in an envelope or can, and really just as easy. I like to serve these with paper-thin slices of red onion.
Ingredients
1 teaspoon vegetable oil
1 lb. ground beef or ground turkey
1 medium yellow onion, peeled and chopped fine
1/2 cup best-quality ketchup
1/2 cup best-quality chili sauce
2 tablespoons Worcestershire sauce
1 teaspoon coarse salt
freshly cracked black pepper
1/3 cup water
6 sesame seed topped hamburger buns, warmed
Method
Brush a skillet with oil and warm over moderate heat, 30 seconds. Add beef [or turkey] and onion and sauté 10 minutes, stirring frequently. Add all remaining ingredients [except buns] and simmer, uncovered, 10 minutes. Spoon mixture between split buns and serve immediately.

I love hosting parties and my favorite food to serve at parties is hot dips. These are my top three:
Buffalo Chicken Wing Dip
Shred two cooked boneless skinless chicken breasts. Saute with 1/2 cup Frank's RedHot Sauce (more or less according to your taste) for 5 minutes or until heated through.
Spread 8 oz. softened cream cheese in the bottom of a pie plate, top with the chicken mixture, a layer of blue cheese dressing and a layer of shredded mozzarella cheese. Bake at 350 degrees for 25 minutes.
Hot Pizza Dip
Combine 8 oz. softened cream cheese with 8 oz. sour cream (use a mixer). Add 1/2 tsp oregano, 1/4 tsp garlic powder, 1/4 tsp salt and 1/4 tsp ground red pepper. Spread in the bottom and up the sides of an ungreased pie plate.
Top with 1/2 cup pizza sauce.
Toss together 1/2 cup chopped pepperoni, 1/4 cup chopped green onions and 1 cup shredded mozzarella cheese. Sprinkle over the pizza sauce.
Bake at 350 degrees for 25 minutes or until heated through and cheese is melted and bubbly.
Hot Beef Taco Dip
Brown 1 lb. ground beef. Drain and add 1 packet taco seasoning mix and water according to packet directions.
Spread 8 oz. softened cream cheese in the bottom of an 8 X 11 pan (ungreased). Top with beef mixture.
Add a layer of salsa to cover and top with 2 cups shredded taco cheese. Bake at 350 degrees for 25 - 30 minutes or until heated through.
All of these dips are served with tortilla chips (or whatever you prefer) and ALL of them can be put together the night before and baked right before your party.
You can also use reduced fat cream cheese, sour cream and shredded cheeses.
It won't take more than an hour to whip up all these dips the night before the party.

I say a Taco bar, less messy, cheap and easy.
Just cook up some meat, put out the fixings, VIOLA.
Sloppy joes are well sloppy and not everyone likes them. With a taco you can make it how you want it and it's generally crowd pleasing.
