QUICK CHOCOLATE EGGLESS CAKE
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.
Combine dry ingredients directly in the pan. Mix all the wet ingredients
In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.
Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.
Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

Recipe
In a 1 1/2 quart saucepan stir together the sugar and cornstarch; gradually stir in the milk, keeping smooth. Add the chocolate. Over medium heat, stirring constantly, cook till mixture just starts to bubble and sputter and mounds when dropped from a spoon.
Off the heat, with a wire whisk, gently stir in the sour cream till blended. Then add the vanilla. Pour into the pie crust. Refrigerate till set, several hours or overnight.
Makes 6 servings.

Eggless Chocolate Chip Cookies
Ingredients:
1/2 cup unsalted butter
1/4 cup granulated sugar
1 teaspoon vanilla
3/4 cup all-purpose flour, plus
3 tablespoons all-purpose flour
1/8 teaspoon baking powder
1/2 cup chunky chocolate pieces
1/4 cup pecan halves, salted,roasted
Preheat oven to 300F degrees.
Beat butter and sugar in bowl of heavy-duty electric mixer until light and creamy.
Beat in vanilla.
Add flour and baking powder; beat just until mixed.
Stir in chocolate pieces and pecans.
Dough will be firm.
Shape into 6 or 7 lemon-sized balls.
Arrange 3 inches apart on ungreased baking sheet.
Using palm of hand, flatten each cookie to 1/2-inch thickness.
Bake cookies until faintly browned at edges, about 45 minutes.
(The cookies are so big that they require a long baking time.) Remove from oven; let cool on wire rack.

Do you need an eggless recipe because you don't have any eggs or because you are allergic to eggs? If you don't have eggs, you can replace each egg in your recipe with 1 1/2 tablespoons of real mayonnaise.

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C), grease and flour a 9x13 inch pan.
In a large bowl, sift together flour, cocoa powder, soda and salt. Add sugar and mix together.
Add oil, water and vanilla and mix thoroughly.
Pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 1 hour or until toothpick inserted in center comes out clean.

Whether you are making truffles totally from scratch by combining chocolate with butter and cream or the quick way with sweetened condensed milk, you must be careful in the preparation. I prefer to use a double-boiler whenever I'm melting chocolate.
