I have already planned on fried chicken and potato salad but I was thinking of making a green bean casserole too. My bf loves it and he told me once that he really liked cheese and green beans. So I was thinking of mixing salsa con queso and green beans together and making a casserole out of that, do you think it would be good or disgusting? I also need the recipe for potato salad and any other ideas you might have! Thanks so much!

Well, your ideas for the picnic are already pretty good. As for potato salad, after cutting raw potato into cube size, poach it and then mix with green beans (peas) - also poached - add cream, salt and pepper to taste. You may finally sprinkle some chopped parsley or coriander or mint! (PS: Carrot also goes well with potato - similarly cut into cubes and poached)!

I think green bean casserole on a picnic would be a little much. Why not save it for when you make him dinner?

Fried chicken and potato salad is perfect! All you need otherwise is something to drink and a nice dessert.

White Picnic Cake w. Fresh Raspberries

Ingredients
1 cup sugar
1/2 cup unsalted butter
2 whole eggs
1 tablespoon pure vanilla extract
1 1/2 cups flour
1 3/4 teaspoons baking powder
1/2 cup + 2 tablespoons whole milk
1 cup of your favorite frosting, optional
8 ounces fresh raspberries, picked over, rinsed and dried

Method
Preheat oven to 350°
Grease and flour a 9 x 9 inch pan or line a muffin pan with paper liners.

In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan. Bake for 30 to 40 minutes. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Frost as desired. Arrange raspberries over top of cake

Cake Tip: For a cake bottom that is as moist at the frosting-covered top, turn the cake out of the pan once it has cooled. Put the cake back in the pan upside-down. Now the moist cake top will be on the bottom, and the bottom of the cake, which can be dry, will be on top and covered with delicious moist frosting.

I am not sure how salsa and green beans would go together. Here is a recipe for another green bean casserole and a yummy potato salad.
Green Bean Casserole

INGREDIENTS:
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1/4 cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French
style green beans, drained
2 cups shredded Cheddar cheese
1/2 cup crumbled buttery round crackers
1 tablespoon butter, melted

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
3. Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
4. Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

Bacon and Scallion Potato Salad

Ingredients
6 slices smoked bacon
1/4 cup apple cider vinegar
4 pounds small new potatoes, about 1-1/2 inches in diameter
3 celery ribs, chopped
1 cup coarsely chopped scallion greens
1/4 cup sour cream
2 tablespoons mayonnaise

Directions
1. Cook bacon in a large skillet until crisp and transfer with tongs to paper towels to drain. Carefully pour fat from skillet into a measuring cup and reserve. Coarsely crumble bacon.
2. Pour vinegar into a large bowl. Put potatoes in a 5-quart pot, covered with cold water by 2 inches, and simmer, uncovered, until just tender, about 20 minutes. Drain potatoes in a colander and rinse slightly with cold water. When cool enough to handle, quarter potatoes, adding them to bowl as cut, tossing to coat. Add 1 tablespoon reserved bacon fat and remaining ingredients, and salt and pepper to taste, tossing to combine well. Makes 8 servings

I've always liked the first kind but taste it and see how it makes you feel. let me see home made bread and home made mac N cheese. And if you tell him it's home made he'll love it for sure. good luck!!! :)
