Just chattering with my colleagues and apparently the above fact is true. Why does it do this?

EEW! I didn't know it did that.
I know when you spread it on your buttered toast and keep on spreading it about it goes into a creamy colour but I thought that was because of the butter!! Perhaps it's because it gets air whipped up with it?

not sure but maybe because it is made from yeast. yeast is white...
