Is there a way to make vanilla extract without using alcohol? I have some nice vanilla beans and would like to make some vanilla extract but do not want to use any alcohol/liquor. I've never seen a recipe that didn't include alcohol. Does anyone have a recipe?

Alcohol is the agent that EXTRACTS the flavor from the vanilla beans! Then it preserves the flavor. So it is the alcohol that you need to do the job.

Alternatively, try pulverizing the beans in a coffee grinder and freezing in an airtight container.

You can use your vanilla beans to make vanilla sugar.

Basically, bury your vanilla beans in a container of sugar and leave it alone for awhile. The vanilla beans will infuse the sugar with their flavor. You can then use this for your baked goods. However, I don't think the vanilla flavor is as strong as when using extract.

Otherwise, if you don't mind the flecks, you can grind them up and mix them with the sugar.
