Two reasons:
1. The typical Asian has an ectomorphic somatotype. Not all, but a large majority do.
2. The typical "Chinese" restaurant found in the United States is not an appropriate representative of Chinese, or any Asian, cuisine. It's altered to meet the demand of "fat America".

Because what is sold as Chinese Food in the US is not what the Chinese eat in China. Its the Americanized version of Chinese food.

Body type, my friend, body type. Chinese are basically ectomorphs, which means they have lean bodies, and have a difficult time building fat and muscle.
I had a friend that would eat large amounts of rice and vegetables for dinner and was fat, and he said it's what the chinese eat, he didn't understand why. I explained, first of all, body type, second of all, portion size (he really ate a lot of white rice which has little nutritional content), and thirdly, food is energy and he would sit at a desk all day working while the chinese people who subsisted on rice and vegetables would work in the fields all day.
In the end, white rice and fried rice is not healthy for you, they offer little to no nutrition or vitamins, but it does give you energy to burn.

Let me attempt to explain. This isnt necessarily true. It's because authentic chinese food may not be readily available, compared to takeaway chinese meals. Most chinese foods are really healthy, such as the wanton mee, which comprises of noodle soup and vegetables . There are numerous other healthy dishes too. I suggest you skip takeaway meals, which are "loaded with calories and fat " and eat at restaurants, where food is generally well-prepared and closer to the original item. Happy eating:)

They or you? 'Skinny' is not equal to healthy. 'Skinny' is quite subjective if you compare to the Westerner. BMI for Asian is 17 to 23, while it is 20 - 25 for the Westerner.
Chinese food is not equal to junk/fast food. It is an art not just to fill up and get fat.
So you like your western foods and let the Chinese take their food.

Im not sure they're All skinny! but generally ya a lot of them seem to be in good shape.
I dont think they eat the heavy type food sold in restaurants and takeaways..they sensibly eat plain food without lots of sauces..
basically whats seerved in the restaurants is like comfort food!lots of sauces and lots of that monosodiumg's...fattening
I think its better in general to stick to plainer food..

all food prepared for mass production is bad. When they cook at home their food is fresh and healthy.The same applies to other food cultures.However our governments allow in our food following chemicals:
Benzyl alcohol,isopropyl alcohol,ethyl alcohol,propylene glycol,glycerin,mannitol, sorbitol ,polydextrose, ethyl acetate, glyceryl monoacetone,glycerol diacetate,triacetin.......and so on
Baby food contains some of these and ASPARTAME !! which is poison.
Now after all that do you think our food in "civilised" countries is
good? Not unless you cook it at home from basic ingredients you either grow or buy from reputable sources.

Probably beucase they eat it in minimum amounts. Americans eat much more food than other countries. The french for example, are all about bread anc crouisonts. (sp?) but they don't get fat because they only have small amounts of it.
