You have to get fresh fish. Make sure when you buy to ask when it came in and ask to smell the fish if in doubt. Fresh fish shouldn't smell fishy. They should be happy to obligue. When you get it home, rinse it in cold water before you prepare. Pat dry. This is the best fish dish I have ever made. You can also use sole.

STUFFED FLOUNDER

1/4 c. chopped onion
1/4 c. butter
1 (3 oz.) chopped mushrooms (reserve juice)
1 (7 1/2 oz.) can crabmeat
1/2 c. saltine cracker crumbs
2 tbsp. snipped parsley
1/2 tsp. salt
Dash pepper
2 lbs. flounder fillets
3 tbsp. butter
3 tbsp. flour
1/4 tsp. salt
Milk
1/2 c. dry white wine
4 oz. shredded Swiss cheese

In skillet cook onion in 1/4 cup butter until tender, but not brown. Stir mushrooms into skillet with crabmeat, cracker crumbs, parsley, 1/2 teaspoon salt and pepper. Spread mixture over fillets. Roll fillets and place, seam side down, in baking dish.
In saucepan melt 3 tablespoons butter; add flour, salt, milk and juice from mushrooms and white wine. Cook and stir until thick. Pour over fillets. Bake at 400 degrees for 25 minutes. Sprinkle cheese. Return and bake 10 minutes longer.

Lightly fry your choice of fish in just a tiny bit of oil.

add a can of chopped tomatoes
a jar of pitted olives(green or black)
a chopped onion
capers
and a crushed clove of garlic
salt and pepper to taste cook just until veggies have simmered. Not too long or your fish will be mush. You can always add the fish on top and cook your veggies separately ( an inside secret)
You can also add some spicey peppers if you're into it.

Grilled Sea Bass

Ingredients
4 tablespoons olive oil
4 garlic cloves, minced
6 6- to 8-ounce sea bass fillets
5 ounces fresh shiitake mushrooms, stems discarded, caps sliced [about 3 cups]
4 large plum tomatoes, chopped
3/4 cup pitted brine-cured black olives [such as Kalamata], halved
1/4 cup chopped fresh oregano
2 tablespoons chopped fresh parsley
2 tablespoons fresh lemon juice
3 anchovy fillets, minced
1 tablespoon drained capers

Method
Prepare barbecue [medium-high heat]. Mix 2 tablespoons oil and half of minced garlic in small bowl. Brush garlic oil on both sides of fish. Sprinkle fish with salt and pepper. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add mushrooms and remaining garlic; sauté 5 minutes. Add tomatoes and next 6 ingredients.

Reduce heat to medium-low; cook 5 minutes to blend flavors. Season sauce with salt and pepper. Remove from heat. Cover and keep warm.

Grill fish just until opaque in center, about 3 minutes per side. Transfer to plates. Top with sauce and serve. Serves 6

Make fish tacos
Put some white meat fish like catfish, sole or tilapia in a buttered pan. Sprinkle chili powder over it, top with taco sauce and bake at 350 degrees until flaky and done.
Put it in a taco shell or tortilla with shredded lettuce, tomatoes, chopped black olives, cheese and eat and enjoy!

I like to use tilapia fish.
It's easy to cook, and simple to prepare.

You could cook it stove top if ya like. A little Extra Virgin Olive Oil, season the tilapia to your tastes, and pan fry for about 4 minutes on each side.

Baking is also an option.
Use EVOO and butter for taste. Add lemon juice and salt & pepper. Bake for about 20 minutes.
