I'm vegan, so I can definately see where you're coming from.
First, you could post your question under the "Vegetarian and Vegan" section of Answers. (It's under the Food category.)
Also, if you do searches with phrases like, "vegetarian cooking", "vegetarian recipes", "vegetarain living", etc. (even substituting "vegan" for vegetarian), you'll find plenty of results. In the sources section are some of my favorite sites (like VegWeb) and other sites I have bookmarked. My intent was to have the sites clickable, which is why I put them in the source list section, but only one seems to be. Actually, what I'm sharing is about half. Since some sites just have veg*n receipes on them, and others, are animal welfare sites.
Also, I have found it to be quite easy to just alter some recipes, i.e., a meat sub instead of meat; vegetable broth in lieu of meat broth, etc. Also, the lbrary might have some veg cookbooks.
Persoanly, I don't get bored easily. I guess it comes with plenty of eating for one and eating two of the same meals in same week so that I don't have to worry about leftovers going bad.

Have you tried to put the word " vegetarin" in your search , you will get tons of recipes, I actually just did that on Monday and got an awesome recipe for Souther bean Soup with Turnip Green...

I'm a carnivore so I really can't relate. There's only so many ways to cook a carrot, ya know? Have you tried different toppings and seasonings? With the hundreds of fruits and vegetables available in larger markets, you pretty much have a huge choice of different ways to excite up your veggies. You just have to get creative.

some bloody rare steaks and raw sausage, fish eyes, stomach linings, pig head, pig bum, liver in fat, cow brain, cow tongue, the list is endless and yummy.
