Make or buy vegan pastry. Most margarines are based on vegetable oil - just check the ingredients on the pack. Sweat off onion, garlic in vegetable or olive oil and when soft add your choice of diced vegetables, herbs and seasonings. Mix with bread crumbs. If the mixture is too dry moisten with a little soya milk. Roll out the pastry cut into portions, place the filling in the middle, fold and seal. Cook at 180° C for about 20 min. Depends on size of pasty.

Vegan Pastry

This is a simple shortcrust pastry recipe. Now that vegan margarine is so readily available there is no need for vegans to miss out on pastry dishes.
Ingredients

4 oz vegan margarine
8 oz flour

Notes

Also works well with 2 oz marg and 2 oz white vegetable fat.
Method

Rub the margarine into the flour, add a pinch of salt and enough cold water to bind it all together.

Leave to rest for 20 mins before rolling or shaping.

You'll need one small Vegan, they are usually underweight with very little fat on them.
You can generally find them expiring around health food shops but you could pick one up almost anywhere.

Dice finely, add onions a touch of garlic carrots parsnip and braise gently for half an hour. Wrap the mixture in thick pastry and cook at 200C for half an hour.

Yummm
