To simplify the process:
The guard cells of the leaf's lower epidermis are the only cells in this region that contain chloroplasts and therefore carry on photosynthesis. In light, photosynthesis produces sugar which
causes the inside of the guard cells to have a lower concentration of water than the surrounding cells. Water diffuses (actually osmosis) into these guard cells , swelling them, thus causing the stomata to open. In darkness (i.e.,night), in the absence of sugar production, the reversal of water movement occurs and the guard cells slightly shrink, and the stomata close.
I believe that this is a theoretical explanation amongst others.

When the plant has a lot of water, the guard cells around the stomata will swell and open. When the plant is lacking in water, the guard cells will contract and close the stomata.
