Transformers can have a winding that has several connections on it. These different connections are called taps. Both the input and output winds can be tapped. The are used to set the input or output of the transformer to the desired voltage.

When you select, for example, 6 or 12 volts on a car battery charger you are typically switching from a 6 volt tap to a 12 volt tap on the transformer in the charger.
