Well, I kind of believe in God (just a few things that I don't agree on: such as homosexuality is a sin and a crime)
But the answer to that is that they probably don't see that it's a crime to say it. I know that in the bible you musn't use the Lords name in vain but I guess if you don't believe in it that it doesn't really matter for them.
I, have to admit, that I do say "Oh my God" quite often instead of "Oh my gosh!". Personally it just became a habit. I don't think anyone is trying to offend Christians in general. That would be a lousy way of doing it anyways!
So, I hope I haven't offended you, and maybe I've answered this question.

Jesus christ, idunno.
Actually it is because it is a commonly used word, If you hear a word often enough you start to use it subconsciously.
But to atheists it is just an expression, why do people who believe in god use these words would be a better question as they believe that there is a punishment for saying such.

They're expressions. Surely you know what expressions are.
Did you think this observation (which has been made here dozens of times) is some kind of effective critique of atheism? It isn't - pretending that you don't know what an expression is only reveals a desperate denial. Shouldn't it make you wonder about your beliefs, if you have to lie so much to defend them?

They are called idioms (just one letter different from idiots, I just noticed)
Figures of speech and mean nothing more than that.
I am an atheist yet I sometimes use "JEEEzuz! when something happens to shock me or surprise me or even upset me.
I would even say "FerChrisake!" but it has no connection with JC, just a figure of speech that is commonly used, more as an expletive than anything else.
OK?

They are so used to hearing it over and over by just about every so-called "Christians" out there who think nothing of over-using it for every stupid thing they see or hear, that it becomes nothing more than one more bad habit. Monkey see, monkey do!!! as it were!!!
People who truly have a close relationship with the true God, know better than to use His name or His son's name in vain or in anything more than a respectful manner as they are aware of the commandment to not do so... and therefore hold it in the highest esteem as they approach Him in spirit and truth and not at the drop of a hat, in worldly and exaggerated silly expressions!

And why do people who do believe in god blaspheme and shout out "Oh My God" in the middle of sex? They are just words to non believers.

Why do those who DO believe in god say things like that?
You ask this question as if you yourself, or every other christian on this planet is perfect.
If that isn't the intention you are trying to make I would suggest rewording your question. :D

They are simply expressions that are picked-up as a habit and used without realizing they may offend someone. Very thoughtless.
