since the soy milk is healthier than coconut milk..
Do you have some experiences of it? would it have the same taste?

I wouldn't use soy milk instead of coconut milk. Coconut milk has much more fat and therefore makes sauce or recipes a lot smoother and creamier. Soy milk is too watery. Also coconut milk puts a certain taste to the recipe, which soy milk would not. So it would certainly not have the same taste. One of my friends tried to put soy milk in a curry dish once and it tasted horrible.

no way. coconut milk has no subsitute, even the powdered/canned variety is nothing compared to the fresh stuff. soy milk is an acquired taste, I dont think it can be a substitute at all. also, even though it may a healthier 'milk' it may not have the same qualities once its cooked.
