for breakfast - good carbs are the best (whole wheat, oatmeal, fruit etc) -they give you energy
for dinner - lean protein - that repairs muscles
find calorie/fitness calculator on the net, enter your stats and it will tell you how many calories a day you need to maintain your weight. take 300-400calories off that number and that's how much you need to lose weight.
eat 5-6 small meals a day instead of 3 big ones.
5-8 servings of fruit and vegetables a day.
8 glasses of water a day.
4-6 times a week cardio work out for 30-50min plus light weight training.
no junk food, no sodas, no white flour (white bread, pasta, cookies, cakes etc)

Good question... A lot of it is experimentation, no two bodies are the same, so no one else can say exactly what will work for you.
What I have found most effective is cutting out all simple carbohydrates (sugars, sweets, white breads, pastas). And basing my diet primarily around fresh veggies, good sources of protein and complex carbohydrates (brown rice, wheat breads, wheat pasta, legumes etc.) Exercise is an important part of weight lose to, and you need carbohydrates to fuel your body for this exercise. Protein builds muscle, more muscle = more fat burning, so make sure you not only do cardio but weight training too. And veggies, well they are just good for ya, low in calories and high in nutrients our bodies need to keep healthy.
And don't forget to include some good fats - olive oil, avocado, nuts etc. They are good for your heart and olive oil and avocado does curb the appetite. You shouldn't overdo any type of fat though.

Write down your weight every week
From the day you decide to lose weight, weigh yourself once or twice a week before breakfast. Keep a record of this weight and see the pattern that develops.

Fruit and veg. They are filling yet have few calories. You should eat from each category just vary the amount from each one. Remember portion size plays a big part. 1 portion of cheese is the size of a match box, 1 portion of meat/fish is the size of your fist. Women should eat 1500 calories a day to maintain weight and shouldn't go below 1000 to lose, men should have 2000 calories a day to maintain and no less than 1500 calories to lose weight. Studies have shown that reducing calories and burning off more calories than you consume, is the best way to lose weight. Low carb, or high protein diets like Atkins...really are not going to do it. You need to watch your calories. You need to watch out for sugar alcohols in your foods. And, you need to burn burn burn those calories off!!
