it doesn't matter how the the rice is prepared, and I'm not sure if I have the problem with other kinds of rice (though I suspect I do). up until I was 18, I had no problem eating white rice, and ate a lot of it, but I developed the intolerance over the next few years

maybe you are allergic to rice. stop eating it if your body doesn't accept it. besides - white rice is not really healthy.

White rice is a simple carbohydrate, which can be known for bloating etc. I'd suggest swapping white rice for brown rice, a complex carbohydrate, it's much better for you. See if this makes a difference. You can develop intolerance's for foods that you consume a lot of, see how the substitution for brown goes.

Rice is an acidic food. If you eat too much acidic food you will get heartburn. Try and eat an even balance of acidic food and alkaline food.
The reason it didn't bother you when you were 18 is that over the years our digestive system works a little different to when we are younger.
