This is the first quinoa recipe I tried.
Quinoa stir fry

1 cup quinoa
2 cups stock or other liquid
1 cup toasted pecans
6 ounces fresh spinach
1 cup halved cherry tomatoes
1/2 cup parmesan

Toast quinoa in dry skillet over moderate heat until golden-add liquid,reduce to simmer,cover and cook 20 minutes or until liquid absorbed. Add spinach and cook just to wilt-stir in tomatoes,nuts and cheese, heat through.
Add herbs spices etc. to your own taste when you add the liquid to the quinoa-I like garlic in this version.
This is delicious and I have experimented with different veggies, nuts and cheese and it is always good.
