What happens to dead epithelial cells that slough off the gastrointestinal tract?

Depends which enzyme, most are broken down to amino acids and reabsorbed in the gut, some are recycled (mostly bile salts which are not really enzymes), some are inactivated. Dead cells sloughed off in the gut end up in the feces.

Dead cells can either be digested with the food, and anything useable can be absorbed. Anything that the body doesn't need makes its way out -
