I ask this because it's 2:00 AM, I haven't been to sleep yet, and I'm getting a bit hungry. I'm not sure which day to consider the calories from my snack eaten in.

Unless you eat in your sleep, I'd count it from when you wake up. The time of day has little do with counting calories though. Just because you might eat more than your limit one day, and less the next won't achieve your goal.
Burn more calories than you take in... no matter what time it is.

if you are hungry - eat some fruit, veggies, yogurt -anything that wouldnt add too much calories because new day starts when you wake up.
