I make fried chicken, chicken and wild rice hot dish, and that's about it. The person I cook for can't eat onions or green peppers.

Easy chicken in wine sauce...
You'll need:
*thinly pounded chicken strips or breasts (1/2 to 3/4 lb.)
*flour (seasoned with salt and any herbs you like)
*1 Tbs. of butter
*2 Tbs. of olive oil
*1Tbs. minced garlic (optional)
*1/2 cup of wine and 1/2 water; adjust as you like as long as the liquid comes to 1 c.
*a couple handfuls of sliced mushrooms and fresh spinach (optional)

Just roll your pieces of chicken in flour that has a bit of salt and herbs blended in. You don't have to coat with egg or anything else before flouring. (I keep it really simple sometimes.)
Take 1 Tbs. of unsalted butter, not margarine, and 2 Tbs. of olive oil.
Brown both sides of your chicken at med/hi heat and remove from pan.
If you'd like, take 1 tsp. of minced garlic and brown. Next add your wine and water. (I like to use 1/4 c. marsala and 1/4 of whatever's in my fridge but any light wine will do if you'd like a less heavy taste.)
Replace the chicken in pan and let simmer. This will thicken and make a lovely sauce.
Optional: I take sliced mushrooms and fresh spinach and spread a thin layer on top of the chicken while it is simmering and cover. You'll want to check the chicken as it starts to thicken to make sure it isn't scorched at the bottom. Simmering for about 10 min. is fine.
Serve with buttered noodles... YUM!

Easy Italian Style Chicken Recipe

INGREDIENTS:
4 boneless skinless chicken breasts (halves)
3 large eggs, beaten
1 cup Parmesan cheese
1 cup fine dry Italian bread crumbs
1/4 cup Italian salad dressing
1/4 cup butter


PREPARATION:
Wash chicken and pat dry. Dip chicken into eggs. Combine cheese and bread crumbs. Coat chicken thoroughly with crumb mixture. Place on greased baking sheet. Drizzle with salad dressing and place pats of butter on each piece of chicken.
Bake at 350 degrees for 45 minutes.


Easy Chicken Parmesan

INGREDIENTS:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese


PREPARATION:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden.
Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.

Here's 2 really simple ways--

Add either cream of mushroom or cream of chicken soup to it and bake.

or

my favorite is to marinate them by soaking the chicken in lemon juice, olive oil, and italian seasoning for a few hours, then grilling them.
