Making a coffee roaster. I could use a thermostat to keep the temp around 500 degrees F.

A thermal cutoff is an electrical device, at least in this circuit and any I've ever heard of.

If this were to roast coffee beans, I wish I knew the amount. If it were like 5 lbs, I would just buy a small electric oven, bout 35 -40 bucks, like the one I have to cook little pizzas and stuff in. It heats to 500 degrees just fine, and has a timer that goes an hour, or you can put it to stay on till you turn off.

get one in oven replacement parts store (one appliances spare parts store)
