Cut the skin on the outside of the swirl so you can actually see the pineapple that is inside, the equally cut the pineapple in 1/4" slices. Also, make sure you wash the pineapple rings after the cut so they can tast fresh and make sure you have some pineapple juice to add flavor to the pineapple swirls when you want to eat them.

Peel pineapple from top to base. With a wooden dowell with piano wire/fishing line affixed to the top, begin coiling the line holding the top of the dowell all the way down to the pineapple. That should make a good swirl.

cut the bottom off first to make a flat base - cut from top to bottom to take off the rind - this will leave little brown things - cut these by following their natural layout and it will look like a swirl design on pineapple
