He makes sweeping generalizations about their cuisine and preparation techniques and bad mouths them every chance he gets. Did he apprentice for a really mean French chef at one time?

I see that too. He has a big Italian ego. His experience of cooking and food is based soly on what he has done or seen. So he is going to have a preference. He is Italian so it's an Italian world. I am sure he knows most cooking techniques are from France most cooking terms are in French. Maybe he feels insecure about it? I am not French nor to I like the French that much but I am not afraid to give them props were props are due. The dude needs shut up and lose some weight.

I am not sure, but I have noticed that. All Italians and French Chefs think they are the best. I stopped watching him, he just annoys me any way
