Easy QUICHE LORRAINE

1 1/2 c. light cream
4 eggs
1/2 tsp. salt
Dash pepper
8 oz. shredded Swiss cheese
2 tbsp. flour
8 slices crisply cooked bacon (crumbled)
1/4 lb. boiled ham (chopped)
1 (9 inch) unbaked pie shell ( I use store bought)

Heat oven to 350 degrees. Combine cream, eggs and seasonings; mix well. Toss cheese with flour; add cheese mixture, bacon and ham to egg mixture. Pour into pastry shell. Bake for 40-45 minutes or until knife inserted in center comes out clean.

I like a light mostly eggless quiche.
8oz tofu,
2 eggs,
tsp dijon mustard
blend all othe above in food processor

saute any veggies you have in the house in some olive oil w/ chopped garlic, and some salt and pepper.
place in a store bought pie crust or puff pastry in a pie plate, bake at 350 till all set.
yummy
