Potato Bacon Casserole

Makes 6 servings

4 cups frozen shredded hash brown potatoes

1/2 cup finely chopped onion

8 ounces bacon or turkey bacon, cooked and crumbled

1 cup (4 ounces) shredded cheddar cheese

1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk or Nestlé Carnation Evaporated Lowfat 2% Milk

1 large egg, lightly beaten or 1/4 cup egg substitute

1 1/2 teaspoons seasoned salt

PREHEAT oven to 350° F. Grease 8-inch-square baking dish.

LAYER half the potatoes, half the onion, half the bacon and half the cheese in prepared baking dish; repeat layers. Combine evaporated milk, egg and seasoned salt in small bowl. Pour evenly over potato mixture; cover.

BAKE 55 to 60 minutes. Uncover; bake an additional 5 minutes. Let stand 10 to 15 minutes before serving. ~ Over-Nite French Toast ~
INGREDIENTS:
2 Tbsp. corn syrup
1/2 cup butter
1 cup brown sugar
1 loaf French bread, sliced 1" thick
5 eggs, beaten
1-1/2 cups milk
1 tsp. vanilla
1/4 tsp. salt
PREPARATION:
Combine the corn syrup, butter, and brown sugar in a small saucepan and simmer until the sugar has melted, stirring frequently. Pour this mixture into a greased 9x13 inch casserole dish.
Place the bread slices over the sugar-butter mixture in the dish.

In large bowl, beat together the eggs, milk, vanilla, and salt; pour this mixture over the bread. Cover the dish and refrigerate overnight.
The next morning, preheat oven to 350 degrees. Uncover the pan and bake for 45 minutes. Serve while hot or warm, since the French toast will harden in the pan. It can be reheated.
Easter Brunch Pizza
RECIPE INGREDIENTS:
1 (16.3-ounce) tube buttermilk biscuit dough
1 teaspoon olive oil
1 tablespoon chopped parsley
1 tablespoon minced fresh garlic
1 1/2 cups shredded part-skim mozzarella
1/3 cup grated Parmesan
Toppings for decorations (we used red, yellow, and green peppers, red onions, and cooked breakfast sausage)
1. Remove the dough from the tube and separate it into biscuits. Pull apart each biscuit to make 2 thinner, even layers. Place all the dough pieces on an ungreased cookie sheet and flatten them gently, gradually molding them together to form a single egg shape.

2. Bake at 350° for 8 minutes, then remove the crust from the oven and let it cool.

3. Mix together the oil, parsley, and garlic in a small bowl. Brush this mixture over the cooled crust. Cover the crust evenly with the mozzarella, then sprinkle a layer of Parmesan on top.

4. Add toppings to create stripes, polka dots, and other accents so that the pizza looks like a decorated egg (a great job for kids). Return it to the oven until the cheese is melted, about 5 to 10 minutes. Serve warm.
