Lazarus department store used to make such a cake...

4 c. carrots, grated (spoon, not packed into cup)
2 c. sugar
2 cups white grapes
1/2 c. apple butter
4 lg. egg whites
2 tsp. vanilla
2 c. flour
2 tsp. each baking soda & cinnamon
1/2 tsp. salt


Preheat oven to 375 degrees. Coat a 9 x 13 inch baking pan with non-stick vegetable spray. Set aside. In large bowl combine carrots, sugar, grapes, apple butter, egg white and vanilla. Stir to blend. Add remaining. Mix completely. Spread batter in pan. Bake about 45 minutes until pick inserted into center comes out clean. Cool on rack. Cut into squares.

Applesauce Bars ¼ cup margarine ¾ cup packed brown sugar ¾ cup unsweetened applesauce 1 cup all purpose flour or whole wheat flour ¼ cup raisins ½ tsp soda ½ tsp cinnamon 1/8 tsp nutmeg 1/8 tsp cloves ¼ cup chopped nuts Microwave (high) margarine in glass mixing bowl 30 seconds 20 seconds or until margarine is softened. Blend in brown sugar, beat in applesauce. Stir in flour, soda, cinnamon, nutmeg and cloves. Mix in nuts and raisins. Grease 8 inch square glass baking dish on the bottom only. Spread batter in dish. Microwave (high) uncovered, 8 minutes or until no longer doughy, rotating dish twice. Cool cut into bars. Note: 1 bar provides 120 calories, 4 grams fat and zero cholesterol. Exchange Value: 1 bread and 1 fat.

I don't think they used whole grapes, but rather raisins soaked in warm brandy, rum or syrup to plump them.
