Yes, you can. We normally advice the patient not to use the straw after the extraction done (not confine to the wisdom teeth only) The reason behind it is that sucking with a straw will cause negative pressure inside the mouth. This will lead to bleeding from the extraction site. That's also the reason why we advice the patint not to drink or eat hot food, but cold drink and food, also to prevent bleeding.
After a week, the healing is well organized already(if there is not infection etc). So, definately there will be no problem for you to use a straw. because it doesn't matter anymore..

You should have had a set of instructions given to you when your teeth were pulled, first and foremost, consult them. Next, it depends on how difficult the extraction was, and if you are setting up for dry socket. There should be minimal if any pain left to the area, and if it has been a week, are there any sutures that need to be removed? The safest bet is to consult the one who took the teeth, but generally a week after extraction is fine to use a straw to drink thin liquids.

Yes. The issue about not using a straw immediately after extraction is related to blood clot formation. Once the tooth is extracted, a blood clot forms. That's where the healing starts. You don't want the clot disturbed because that can cause complications, including "dry socket." Drinking through a straw can cause the blood clot to move, which is why you are instructed not to do it immediately after extraction.
A week after the extraction, the blood clot itself is forming into tissue that will eventually become bone. No more worries about it moving. Happy straw sipping!
