Chicken manchow soup
Preparation time:30 mins, Cooking time:10 mins
What U need:-
¼ cup cooked chicken pieces
¼ cup cooked prawns, finely chopped(optional)
4 cups chicken stock
1 tsp ginger, finely chopped
1 ½ tsp garlic, finely chopped
1 tsp green chilies, finely chopped
2 tbsp carrots, finely chopped
2 tbsp capsicum, finely chopped .
2 tbsp mushrooms, finely chopped
2 ½ tbsp spring onions,
¼ tsp white vinegar
¼ tsp pepper.
¼ tsp ajinomoto
1 tbsp soya sauce
1 tbsp coriander leaves,finely chopped
4 tbsps cornflour mixed with 1 cup water .
2 spring onion stems
1 beaten egg
3 tbsps Oil
Salt for taste
Method:-
Heat oil in a pan. Stir fry the ginger, garlic, coriander leaves and green chilies for about 2 minutes.
Add all the vegetables, pepper, ajinomoto, vinegar and salt and continue to stir fry for 2 more minutes.
Add the cooked chicken and prawns to the vegetable mixture and mix well.
Add the soya sauce, chicken stock and salt.
Let boil, reduce the heat and add the cornflour mixed with water and stir constantly till it thickens slightly.
Pour in the beaten egg and keep stirring slowly or scramble egg lightly and add it to the soup.
Remove from heat. Garnish with spring onion greens and serve immediately with chilies in vinegar and chili sauce.

Schezwan soup
Preparation time:15 mins, Cooking time:20 mins
What U need:-
½ cup cabbage,finely cut
½ cup carrot, finely cut
1 tomato
1 garlic clove, minced
1 cup mushrooms
2 tsp tomato sauce
1 tbsp red chili sauce
1 tbsp green chili sauce
1 tbsp Soya sauce
1 tbsp vinegar
2 tsp corn flour
¼ tsp ajinomoto
1 tbsp oil
6 cups vegetable stock/water
pepper to taste
2 tsp coriander leaves
2 tsp scallions/spring onions
salt and sugar to taste
Method:-
Sauté' mushrooms and scallions for 2 minutes and keep aside
In another pan, saute' veggies and boil them until tender.
Now add the stock, mushrooms, garlic, Soya sauce, tomato sauce, red chili sauce,
green chili sauce, ajinomoto and vinegar. Stir well.
Bring soup to boil.
Mix corn flour with water and add to the soup.
Add salt, pepper and sugar.
Put off flame.
Garnish with cilantro and spring onions greens.
Serve hot,

* Oil ---- 1 teaspoon
* Minced garlic ---- 2 teaspoons
* Mushrooms ---- ½ cup, chopped
* Cabbage --- 1 cup, shredded
* Spring onions --- ½ cup, chopped
* Cooked chicken breast ---- ½ cup, shredded
* Soya sauce --- 2 teaspoons
* Chicken stock ---- 4 cups
* Corn flour ---- 3 tablespoons
* Salt & Pepper ---- To taste
Prepare the stock several hours or a day ahead. Take 6 cups of water, add one chicken breast, few leaves of celery, a slice of ginger and one chopped onion. Add 1 teaspoon salt and ½ teaspoon pepper corns. Simmer till the chicken is cooked. Strain and reserve the chicken breast, part of which will be used in the soup. (The remaining chicken can be frozen to use in other recipes) Cool the stock and refrigerate. The fat from chicken will solidify on the surface. Discard the fat and use the stock. Heat oil in a non stick pan, fry the garlic till fragrant. Add mushrooms, cabbage and spring onion. Sprinkle with a little salt. (This will release the moisture from the vegetables and help to cook them in their own juices without the need for more oil) Sauté till the vegetables are tender. Add soya sauce and the stock. Bring to a boil. Add corn flour mixed to a paste with some water or stock. Simmer for a couple of minutes. Taste and add the seasoning. Serve hot.
Don't know about the szechuan sauce.
