Mine is a teaspoon of natural (unprocessed) cocoa powder. It doesn't taste chocolately, but it adds a nice depth of richness.

What one ingredient makes your chili stand out and why? If it's a beer or an ale, which kind?

I LOVE the cocoa idea!

I add red wine to my chili. It reduces to a flavorful sugar.

A dash or two of cinnamon--it doesn't taste like cinnamon, but it really adds flavor to the chili. I made it once and my dad said that the chili was "perfect."

P.S. Cocoa powder sounds.....interesting. Definitely going to try it!

I add half a cup of corn flour. It gives it a fuller body, and a distinctive flavor. My dad adds a bit of brown sugar to his. I'll definitely have to try the cocoa.

cinnamon, just a bit. I tried it once and everyone went crazy trying to figure out what it was. I am definitely going to try your cocoa powder suggestion. Thanks for the tip!

I add cut okra. It gives the chili a bit of a cajun gumbo twist.

That sounds awsome! I have had that a coworker made it, and I loved it. My secret ingrediant is a chipotle pepper. A smoked jalapeno.
