We have having an around the world company lunch in at work tomorrow and we are all supposed to bring something from our ethnic background. I am mostly German and Native American and need a receipe from one of those back grounds that is good and not very complicated to make but also that will make a great hit at work. Any suggestions?

I am a Native woman.

The best and easiest pan-Indian (Native) recipe is frybread.
People love it and it couldn't be easier to make.
You can also make Indian tacos using frybread.

Smoked salmon is more expensive but also traditional and very tasty.

Spatzle

3 cups flour
4 eggs
1/4 tsp. Nutmeg (optional)
1-2 tsp. salt
1 quart cold water

Stir flour, eggs, salt, and 1/2 cup of water. Beat until batter is smooth and no longer adheres to the spoon. Add water as needed. The spaetzle dough can be firm enough to be rolled and cut into slivers or soft enough to be forced through a sieve, colander or spaetzle-maker with large holes.


Bring a pot of salted water to a boil. If you have a Spätzle press, press the dough through the press and into the boiling water. If you do not have a press, place dough on cutting board and roll out. Cut dough into tiny noodles. Add noodles to boiling water. They cook quickly and are done when they float back to the surface. As the noodles finish cooking, remove them with a slotted spoon.


You can saute' the noodles in a Tbsp. of butter before serving. Other suggestions: Serve with a brown gravy or beef stock.


If you don't want to use the egg yolks, use the egg whites and add some yellow food coloring for a nice color.

Fry Bread: (native american)
INGREDIENTS
4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 1/2 cups warm water (110 degrees F/45 degrees C)
4 cups shortening for frying
DIRECTIONS
Combine flour, salt, and baking powder. Stir in 1 1/2 cups lukewarm water. Knead until soft but not sticky. Shape dough into balls about 3 inches in diameter. Flatten into patties 1/2 inch thick, and make a small hole in the center of each patty.
Fry one at a time in 1 inch of hot shortening, turning to brown on both sides. Drain on paper towels.
Serve with Jam or honey.. but delicious by themselves!

Ingredients
Variety of German breads including:


Whole Rye Bread (Katenbrot)
Wholegrain bread (Vollkornbrot)
Pumpernickel
Sunflower Seed bread
Three Seed Bread (Mehrkornbrot)
Crispbreads (Knäckerbrot)
Prosciutto
Black Forest ham
Variety of German cheeses
Fresh herbs
Pickled vegetables

Preparation
Cut bread into decorative shapes (alternatively buy as cocktail rounds). Spread bread with butter and layer with German cheeses such as Butter cheese (Butterkäse), Tilsit, Emmentaler, Brie, Camembert or Bavarian Bleu cheese. Add various other toppings such as lettuce leaves, black forest ham, prosciutto, hard-boiled eggs, cooked white German asparagus, herrings and German mustard. Pickled red cabbage makes a decorative garnish, as do any of the German pickled vegetables. A sprig of fresh dill or parsley and some ground black pepper adds a nice touch.

I recommend the Indian fry bread. Tastes a bit like funnel cake, and good with a variety of toppings...like taco ingredients on top, or as a dessert with powdered sugar. Also good with wojapi (recipes can be found online), which is like a fruit (any kind) syrup that fry bread is good dipped in.

Roladen
First you get a good cut of beef, thinly sliced. (it usually looks about 3 to 4 inches wide and 6 to 8 inches long)

Cut up onion, dill pickle and bacon.

Spread a light coating of yellow mustard on the sliced beef. (one one side) Then, add the mixture of onion, dill pickle and bacon to each slice of beef. Roll up the beef with mixture inside. Take toothpicks and place in beef to hold the roll together. (some people use thread)

Get a big pot, like a 8 quart size and place a little oil in the bottom. Roll the beef if a lil flour. Place in beef in pot and brown on each side. Then, make your gravy. (I make mine from scratch using flour.) Add salt and pepper to taste. Keep the meat and gravy simmering on low heat for about 2-21/2 hours. That makes it very tender!

Suggestion:

Wrap GOOD QUALITY frankfurters with warm fry bread for your dual-ethnic hot dogs. Give an extra piece of fry bread on the side.
