Because of its italian orgin the word uses greek roots to determine the actual sound of the word.

Well, remember it is an Italian word. In Italian the "gn" is equal to the Spanish "ñ" (In fact the g sound is very soft)
As there is no "ñ" in English, then the g is lost and you just have "n" "a" or "ney" .
Well, that is only a theory, but I think I am right.

Some people DO pronounce it bolo-nuh. I think boloney is the way people who don't want to sounds retarded say it.
