Seared Tuna with Wasabi-This is delicious

INGREDIENTS
2 tablespoons white wine vinegar
10 fluid ounces white wine
1/4 cup minced shallots
1 tablespoon wasabi paste, or to taste
1 tablespoon soy sauce
1 cup unsalted butter, cubed
salt and black pepper to taste
1 tablespoon olive oil, or as needed
1 cup chopped cilantro leaves
6 (6 ounce) fresh tuna steaks, 1 inch thick
DIRECTIONS
Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

Here's a good recipe...
Seared ahi

1 5oz yellowfin tuna steak
Cajun spice
3 tablespoons oil
1 cucumber
1/2 red onion
3 tablespoons rice wine vinegar
Dust the tuna lightly with the Cajun spice. Briefly, about 10 seconds per side sear the tuna steak in a very hot pan coated with up to 3 tablespoons oil. Allow the tuna to cool for a minute, and slice the steak thin into 10 to 12 pieces.Peel, seed, and thinly slice the cucumber. Thinly slice the red onion. Toss the cucumber and red onion with the vinegar.

Tuna Grilled Korean Style

This aromatic marinade is used to flavor and tenderize beef in Korean cuisine. Do not marinate this longer than 2 hours, as the enzymes in ginger can over-tenderize the fish.

1/2 cup light soy sauce
2 tablespoons toasted sesame seed oil
1 teaspoon minced fresh ginger root
3 tablespoons sugar
1 tablespoon sesame seeds
3 garlic cloves minced
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 pounds tuna steak (1 inch or thicker) cut into 4 portions

In a plastic bag combine all ingredients except tuna. Mix the marinade in the bag until combined and add the tuna, coating it completely. Seal the bag, refrigerate, and let the tuna marinate for 1 to 2 hours, turning occasionally.

Preheat a grill or broiler with rack in the top position.

Brush the grill, or broiler with vegetable oil. Discard the marinade and grill the tuna (or broil it on a rack set in a baking pan) for 3 minutes on each side until medium rare.

Serve immediately.

Note: Swordfish or Shark can be substituted

I like it simple.... Marinate it in soy sauce for a few hours then grill it on high to sear the outside but leave the center raw..... Serve with a dollop of sour cream on the side.

i blacken it with seasoning, then sear it in a pan with a lil olive oil and butter. so good!
