There's an unlimited amount of things to do in The Valley! The great thing about living there is the fact that you're basically in Hollywood because it's so close.
There are great bars, excellent fine dining restaurants, theme parks, Hollywood screenings & premiers (yes, they let us regular folk into them - sign up at www.mycinemaaccess.com - I actually just got an invite today), and of course all of the tourist attractions.
Check out Universal City Walk, Universal Studios, Magic Mountain, & The Griffith Park Observatory. There's also a tremendous amount of concert venues like the House of Blues, not to mention the Museums (Museum of Art / Natural History Museum / The Getty Center!), zoos (Los Angeles Zoo), & plays. You should go down to Sunset for great shopping as well, not to mention the famous Venice Beach; street performers & vendors.
I'm new here and what I've been doing lately is eating out at great little places. Some of them have absolutely AMAZING food and you wouldn't think it just by looking at it (try Caruso's in Sylmar [I think], it's an italian restaurant - even the salads are awesome).

Magic Mountain (one the Six Flags theme parks) in located in the San Fernando valley, and has a water park next door. Plenty to amuse anyone.
For more adult fun, try the Universal Citywalk area (further east along the 110). Shops, restaurants, plenty of activity on weekends and evenings.
