I'm tired of the same old thing all the time. its alway chicken, beef with rice or mashed potatoes and a veg. I want to have different ideas so I'm not so bord with what I have. I have a small budget. I'm trying to feed 4-6 people.

Chicken Pesto a la Lisa
The true family-loved pasta dinner--fast and furious with
flavor. Makes 6 servings.

________________________________________
1/2 cup chopped sun-dried tomatoes
1 1/2 cups chicken broth
6 skinless, boneless chicken
breast halves - cut into strips
2 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons cornstarch 3/4 cup prepared basil pesto
1/4 cup toasted pine nuts
1/4 cup chopped fresh basil
3/4 cup crumbled feta cheese
1 (16 ounce) package fusilli pasta
2 tablespoons grated Parmesan cheese

Directions
1 Soak sun dried tomatoes in chicken broth.
2 Cook chicken in oil with garlic in a large skillet over
medium heat until done.
3 Stir cornstarch into a couple of tablespoons of chicken
broth. Stir remaining chicken broth, sun dried tomatoes,
pesto, pine nuts, and basil into the skillet with the
chicken. Mix cornstarch mixture into the sauce, and cook until
thickened. Add feta a few minutes before serving.
4 Meanwhile, cook the pasta in a large pot of boiling
salted water until al dente. Drain. Serve sauce over pasta,
and sprinkle with Parmesan cheese.

For chicken, make it pan-seared with lemon caper sauce, then serve with your favorite pasta and light olive oil. Try a spinach salad with dried cranberries on it.

For beef, try slicing it very thin and sautee it with garlic and soy and sliced asparagus. Serve on a bed of steamed rice.

For chicken carcass, boil it and then use the stock and remaining meat to make a chicken soup. Then boil dumplings in the soup (you can make your own dumplings or use bisquick) this is very old fashioned but the kids love it

For leftover meats or cooked ground beef, make a mixture with mixed vegs, potato, and thicken with starch. Add seasoning such as marjoram, thyme. Put it in a baking dish. Then use a jiffy corn muffin mix and spoon it over the top. Bake until the cornbread is done and meat mixture is hot.

For chicken legs and thighs, sear it in a pan and then cook it Indian style with peas or chick peas, leftover potato cubes, onion and then add cumin, red pepper, other Indian spices. When almost done add some cream or yogurt to make it a little creamy, serve over rice. For a salad use cucumber and tomato cold.

For beef put it in the crockpot with a can of mushroom soup and let it cook all day. Serve over egg noodles.

Pasta is a great way to stretch your budget! Here's an easy recipe for Lasagne that even the pickiest eaters seem to enjoy!

2 lbs Hot or Sweet Turkey Italian Sausage
1/2 onion, diced
3 T Italian Seasoning
1 28 oz can Tomato Sauce
1 tsp fresh ground pepper
1/3 cup good olive oil
1 16 oz brick Velveeta
2 cups shredded Italian Cheese blend
1/2 cup grated Parmesan cheese
1 pkg lasagne noodles

Cook and drain lasagne noodles according to package instructions. You will need about 16. Saute sausage and onion until cooked thru. Drain. Add tomato sauce, spices and olive oil. Simmer for 15 minutes to allow spices to meld. Slice Velveeta into 1/4 inch slices. Layer lasagne as follows: noodles, sauce, velveeta, shredded cheese, and repeat ending with sauce and cheese. Sprinkle with parmesan and bake at 350 degrees covered for 45 minutes. Let sit 15 minutes before serving. This is good with a nice salad and french bread.

Take chicken cutlets, a box of stove top stuffing, a can of italian diced tomatoes, krafts red bell pepper dressing and mozzarello cheese ( shredded)
Pour the box of dry stuffing in a bowl and mix it with the italian diced tomatoes. put the mixture on the chicken cutlets and then roll them up and pin them so they dont come open. Then pour some the red bell pepper dressing over the chicken and add a little bit of the cheese. Bake for about 20- 30 minutes. It tastes great and take no time at all

well, this recipe is sorta like what u normally have but it is extremely good!
You take 4-6 pieces of chicken breast
season it with pepper, salt, adobo seasoning, garlic, etc.
the take a small piece of tin foil and lay that one piece of chicken in it
then take a little chicken stock and pour it into the small tin foil "bowl" until it reaches about half of the side of the chicken
then bake it on 350 degrees for about 30+ minutes or until its cooked alll the way
make some steamed rice
heat some canned corn or carrots or peas and when the rice is done mix the vegetable into the rice
put some rice on a plate and place the chicken on top
pour the chicken stock that is in that tin foil on top of the chicken and rice
this recipe is sooo good and simple and easy

You can also make chicken parmesan
make spaghetti noodles and spaghetti sauce and "sautte'" the chicken breasts with seasoning by putting them into a hot greased pan until it is done
put the chicken on top of the noodles then top it all with spaghetti sauce then place a slice of cheese on it

How about fish? Season and bake fish (clean freshwater fish) Get some Stovetop stuffing mix, add small salad shrimp to boiling water before you put in bread stuffing. Top each fish filet with a good spoonful of stuffing, and bake another 5-10 min.

I have even put a little milk in cream of celery to dilute somewhat and drizzled over top to serve. Steam some broccli/cauliflower from frozen section to side up.

stir frying is always good, add some soy sauce, any type of meat, veggies, rice, anything ya want!
burgers, with a barbecue of course
fish (wrapped in tin foil on the bbq is good)
everyone's fav. MAC AND CHEESE
pasta with brocoli
you could pretty much experiment with diff. foods u like. But those are a few that I've had, they're DELICIOUS!! =D
