Depends on if you are cutting it into pieces or serving a whole roasted one. here are some ideas:

1. For whole chickens: rinse and pat dry. Create a rub of 1 T kosher salt, 1/2 tsp fresh ground pepper, 1 T sage, and 1 tsp of thyme. Rub liberally on chicken and brush with melted butter. Place in baking pan, uncovered, in a 375 degree oven. Baste every 20 minutes using melted butter, lemon juice, and a little garlic powder (optional). After 1 hour, cover the bird and bake an additional 15 -30 minutes (depending on size of bird). Let rest for 15 minutes before carving.
2. For pieces: marinate in Italian dressing over night and drain. You can either grill, broil, or bake them at this point. For baking, place them skin side up in baking dish and follow instructions for whole chicken, cutting down your cooking time to 1 hour to 1 hour 15 minutes total. For breaded chicken, soak in buttermilk plus 1 T hot sauce overnight. Drain and dredge in flour mixed with 1 T seasoned salt, 1 tsp fresh ground pepper, and 1 tsp dried thyme. Place in baking dish and dot with butter. Cover and bake for 45 minutes at 350 degrees. Remove cover and let brown.

Boneless:
Sear the outside so it has a nice brown color then bake it at 350 for 20 minutes per pound or until the internal temperature is 175-180.

Whole Chicken:
Brine it in a big stock pot with water and a couple of tablespoons of salt and sugar overnight. Then stuff the cavity with some herbs like thyme and rosemary. Rub melted butter over the skin and bake it at 350 for 20 minutes per pound or until the internal temperature is 175-180.

I bake it in the oven at 325 for about 20 minutes for chicken breast. I also like to fill another baking dish with water and put it on the rack below the chicken so that there's moisture in the oven and the chicken will come out a lot juicer.

Remove chicken from wrapper and pull out the giblets bag (or the giblets if not in a bag). Wash with cold water inside and out. Put in crock pot or place in 13x9 inch pan. Preheat oven to 350'. Place a quartered onion, or orange, in the cavity. Lightly spray olive oil on the outside of the bird (or rub with a tablespoon butter). Sprinkle with your favorite spices - Mrs. Dash, McCormick's Poultry Seasoning (my fave), etc. Place chopped veggies and potatoes, if you like, around the chicken and bake in oven 10-15 minutes per pound, or until juices run clear when pierced by the thigh (be careful not to touch the bone). Or do it my favorite way if you have the time... put it in the crock pot for 6-8 hours on low, and when you get home the house smells so good! Plus, you know after 6-8 hours it's cooked (but of course, still poke it to see if juices run clear!)

This is a fabulous and easy recipe. Place the chicken pieces, I prefer thighs, on a pan. Brush them with your favorite BBQ sauce, (a little spicy is better) then slice some onions into thin rings and place the rings on top of the chicken pieces. Bake them for at least 1 1/2 hrs at 325. They will be tender and yummy.

350 degrees, boneless breast for about 20 minutes. Before baking, I put a teaspoon of honey with crunched up Special K on top or tomato sauce and bake for about 15 min. and then for the last five minutes, I sprinkle shredded Parmesan cheese on top until melted. Yummy....

375F in the oven for about 10-12 minutes...just to be sure I'd use an internal meat thermometer to make sure the inside of the meat has reached 175F.
