here is a recipe that calls for sour cream

APPLE PANCAKES
3 single eggs, separated
3 tablespoon sour cream
1 peeled apple, finely chopped
3 tablespoon flour
1 teaspoon baking powder
1/2 teaspoon cinnamon

Separate eggs and add sour cream, apple, flour, baking powder and cinnamon to the yolks, stirring well. Beat egg whites until peaks form, and fold into yolk mixture. Cook on hot, lightly greased griddle until golden brown. Delicious served with a dollop of sour cream and maple syrup. Makes about 12.

sour cream adds richness and flavor to the recipe, plus a little acidity to help leaven the product with the baking powder.

Typically, sour cream is made from heavy cream... so you're getting the benefits of oil, sugar (milk sugars) and a smooth consistency.

If you compare the recipe you listed to other more typical pancake recipes, the typical recipes probably call for adding oil or butter, a little sugar and milk. The sour cream is all of that plus a little tartness for flavor.

Well, sour cream is good stuff and you cannot make those pancakes with milk, by the way because you need the fat and CO2 from the sour cream for the pancakes to rise properly
