Perhaps you're treating them condescendingly. Why do you go out of your way to treat them nicely? They are no different from anyone else?
Telling someone that "Jesus loves you" is as inane as "have a nice day." It trivializes the word "love."

Most of the Jewish people I know are highly suspicious of Christians, believing (rightly, in many cases) Christians hold them in contempt and/or blame them for "killing Jesus." As someone else pointed out, given the way they've been treated throughout history, and particularly in the 20th Century, it's not hard to figure out why they might be a little bitter. I'm Jewish on my mother's side, though I was raised Catholic, and I find the attitudes of some Christians toward Jews distasteful. Next time you want to "bless" a Jewish person, don't. Save it for your Christian friends. Just wish them a good day and be done with it.

You have no authority to bless a Jew. Read Genesis. Jews receive their father's blessing, not the goyim's blessing. You're a gentile and a believer in false gods and religion. How would you react to the blessing of a Satanist? No different.

Does anyone else apart from me find this a bit sad?
I'm an atheist, but if someone says 'bless you' to me I take it in the spirit in which it was intended. As something well meant.
If you are a guest and someone offers you something, is it not polite to accept? So I'm surprised people don't just accept your blessing. They can always politely explain that this is not part of their practice afterwards.

One is not supposed to appreciate it when your say "bless you" because it is to God/Allah to bless them. I don't know about Jews but it will probably be appreciated if you say "may god bless you" to other people.
