cheesecake cupcakes
INGREDIENTS
3 (8 ounce) packages cream cheese
1 cup white sugar
5 eggs
1 teaspoon vanilla extract
8 ounces sour cream
1 cup white sugar
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line cupcake pans with paper cupcake liners.
In a medium bowl, cream together the cream cheese and 1 cup of sugar. Stir in the eggs one at a time, then mix in the vanilla. Spoon into cupcake pans to fill about 2/3 to 3/4 full.
Bake for 30 minutes in the preheated oven, until golden brown. Remove from the oven and cool for 5 to 10 minutes.
To make the sour cream topping, whisk together the sour cream, 1 cup sugar, and vanilla until smooth. Spoon into the well on the top of each cupcake.
Return to the oven and bake for an additional 5 to 7 minutes, until set. Set cupcake pans on racks to cool, do not remove cupcakes from the pan until they are completely cool. For a finishing touch, you can add a dollop of your favorite pie filling on top.

The simple way is to use a cake mix of your choice.
I think Dunkin Hines brand is fantastic. To make it taste home made and delicious, add 1/3 cup of sour cream, and a teaspoon of vanilla to the batter.
Whatever recipe you use, spray the cupcake pan with Pam and add the batter. Cook according to directions.
Here's secret for all of you who love to bake cupcakes and wonder what they can do to make them rise really high.
Buy a pizza stone at any store that sells cooking supplies. It costs about $14.
Put it in the oven when you first turn the heat on. When the oven is heated up to the correct temperature, place the cupcake pan on top of the stone, and bake according to directions. They will rise amazingly high.
Also, heat up this stone and place your frozen pizzas on it to bake, and they'll taste amazingly great with a nice crisp crust.

A cupcake not using flour? Just try eating pudding because that's what a cupcake without the flour will taste like.

Bittersweet Chocolate Cupcakes:
24 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
5 large eggs
3 large egg yolks
1 cup sugar
1/2 cup whipping cream
1/4 cup (1/2 stick) unsalted butter, cut into pieces
Preheat oven to 375°F. Lightly butter eighteen 1/3-cup muffin cups. Stir 16 ounces chopped bittersweet chocolate in top of double boiler set over simmering water until melted and smooth. Cool slightly. Using electric mixer, beat eggs, egg yolks and sugar in large bowl until pale yellow and tripled in volume, about 5 minutes. Add melted chocolate and beat until blended. Divide cupcake batter equally among prepared muffin cups, filling cups about 3/4 full.
Bake cupcakes until puffed and cracked on top, about 12 minutes. Cool to room temperature. Run knife around sides of muffin cups to loosen cupcakes, then carefully lift out with small metal spatula. Place chocolate cupcakes upside down on work surface.
Bring whipping cream to simmer in small saucepan. Remove from heat. Add remaining 8 ounces chopped chocolate and unsalted butter; whisk until melted and smooth. Cool until slightly thickened and spreadable. Spread glaze over cakes. (Can be prepared 8 hours ahead. Store in airtight container at room temperature.) Serve cupcakes glaze side up.
Makes 18 cupcakes.

why dont u just use cake mix??? all u have to do is whip up the batter according to the pkg directions and just put them in cupcake tins. u can play around wit the batter kind, food colorings, sprinkles... just have fun!!!

Use vanilla cake mix, and add 1tsp of almond extract and 1tsp of vanilla extract.
