ooo man I would write down 50 pages but I guess the stuff I use the most are pepper (fresh ground is best), table salt, kosher salt, soy sauce, fish sauce, dried herbs like oregano thyme rosemary marjoram bay leaf, fresh onion garlic and ginger, chicken broth, bags of rice, dried spaghetti, canned tomatoes and sauce, ....argh I could go on forever...
It all depends on what you cook, and if you don't cook that often, I suggest you buy lots of nonperishable ingredients like canned goods, dried foods, or spices, or fresh foods that last long like potatoes. I would keep basic cuts of meat like chicken breast legs or thighs, chuck sirloin steaks or eye rounds for beef, and maybe cod salmon or tuna in the freezer in a hefty ziplock freezer bag. Asian foods tend to have alot of garlic, ginger, soy sauce, fish sauce, and rice. Italian mediterranean food has alot of garlic, herbs, olive oil, tomato and cream bases, fish, and pastas. Middle eastern Indian foods have ALOT of spices. European American foods emphasize on meat dishes like beef or poultry. If you wanna bake, keep flour, sugar, cinnamon, nutmeg, baking powder, eggs, butter and milk on hand. Cooking wines and vinegars make good additions too. I'd keep in stock alot of frozen vegetables like spinach, peas, or broccoli just in case you don't have fresh ones.

Flour, eggs, onions, and some sorts of veggies usually. I don't buy meat unless I KNOW that I am going to be cooking it within 1-2 days because old meat freaks me out. :)

I'm from the South so I always have the following in my house.Grits,Bisquick,roux mix,creole seasonings,red beans,black eyes,navy beans,bacon,SAUSAGE,chicken,and coffee..OH I forgot the biggest bag in the kitchen--rice,whole grain.That is my staples.In Ca. it ain't easy to get real fresh shrimp or good sausage, but my family sends care packages for my spices and coffee..
