I don't know if boiled chicken with skin and bones removed is bad for a dog..per se..but I've seen some wierd coats on dogs that are given chicken exclusively.usually greasy.
You can make your own dogfood and many people with large Kennels do this. They cook the following ingredients together in a large pot.
Chuck beef or similar( cut into small chunks)
Sunflower oil is an excellent source of linoleic acid
vitamin E, which are important for a healthy coat and skin
Beef liver provides iron and many trace vitamins and minerals
Brown rice and barley supply carbohydrates for energy, and are a good source of B vitamins
Personally, I would also supliment a good multi-vitamin along with this diet.

As far as only vets answering, they are to busy right now taking someone else's money. Call your vet and she should be able to give you the answer your looking for over the phone!
In my opinion, although I am not a vet just a pet owner, feeding chicken and/or beef with white rice works fine for my dog but I also add fresh organic carrots, plain yogurt, alaskan pink salmon canned, frozen veggies too like broccoli, NOT CORN. And I rotate what I add to her food so she doesnt get bored, also keep in mind that your dog needs doggie vitamins and minerals that it wont be getting from his food so buy a dog vitamin supplement from the store.

You can give them chicken breast. NEVER PUT SALT, PEPPER OR ANY OTHER SPICES. Broil the chicken. I wouldn't recommend to give it too often because chicken doesn't give them all of the nutrients and after the chicken they don't want to eat dry food so I would say to give the dog chicken about 3 times a week.

My vet had me put my dog on a diet of cooked chicken breast (boneless, skinless, poached), white rice and a little yogurt. Cook white rice according to directions. Let cool to room temp. Use 1 cup rice, 1/2 cup chicken and about a Tbsp of yogurt. Mix to combine, and serve. I'd usually cook a weeks worth at one time and store in fridge. I'd nuke for 30 seconds to warm up before serving. My dog loves it. He had kidney issues, and this meal was easiest on his digestion. He's thriving on it.

I have a shih tzu with sensitive stomach. I cook for her. A good boiled chicken mixed with rice is good, or tuna and rice, or hamburger and rice. I do not feed her the skin but she seems to be thriving and I don't have to worry about dog food recalls. I actually think it is cheaper then the store bought and no doubt healthier for her.

I am not a vegetarian but cooked chicken is fine. No drippings at all and no fat either or chicken skins. I've been cooking chicken for my dogs for years. when you cookit no salt or any other spices either. Just plain OK.

No idea about the meat, but make sure you don't give them the bones from a chicken, they splinter easily and can cause harm to the dog's throat and mouth.

It's fine, mix with white rice for roughage. My dogs have been eating that to alleviate health problems for years, with no issues at all.

They are fine. I feed my dogs the same stuff and they actually turn out stronger than if you feed them dry food.
