Tailgate Crab Cakes

6 tablespoons olive oil
1/2 cup chopped onions
1/3 cup chopped green bell peppers
1/2 teaspoon salt
1/4 teaspoon white pepper
Fresh ground black pepper
1 cup green onions
1 tablespoon minced garlic
1 tablespoon Cajun choice seasoning
3 eggs
2 teaspoons Dijon mustard
1 1/2 cups bread crumbs
1 cup grated Parmesan cheese
1 pound real or imitation crab meat
2/3 cups flour
1/4 cup water
Sauce for Crab cakes:
1/2 cup seeded, chopped tomatoes
2 teaspoons minced shallots
2 teaspoons minced garlic
3 tablespoons Dijon mustard
1 teaspoon salt
1/2 teaspoon white pepper
1/2 cup chicken stock (can)
1 large egg*
1/2 cup olive oil
Black pepper

Heat 1/2 of oil over high heat. Saute onions, bell peppers, salt, white pepper and about 15 turns of fresh ground black pepper for about a minute. Add green onions, garlic, Cajun choice seasoning and cook for another minute. Remove and put in bowl. Cool mixture for a few minutes. Stir in 2 eggs, Dijon mustard, 1/4 cup of bread crumbs and Parmesan cheese. Then add crab meat depending on size of crabcake. Gently mix the mixture and form into crab cakes. First dip both sides in flour, then in egg/water (egg and 1/4 cup water whisked together). Cover in bread crumbs and fry about 2 minutes on each side over medium heat.
For the Sauce for the Crab Cakes: Combine everything in a pan except egg, oil, and black pepper over high heat bring to a boil for about 2 minutes. Remove from the heat and let cool for 15 minutes. Put in blender and add egg. While blending add oil and black pepper about 10 turns. Serve immediately.

Crab Cakes

12 ounces crabmeat
1/2 cup bread crumbs
2 large eggs -- beaten
2 tablespoons light mayonnaise
2 teaspoons Dijon mustard
2 teaspoons Italian parsley -- chopped
1 teaspoon thyme
1/8 teaspoon cayenne pepper
2 tablespoons unsalted butter
4 scallion -- thinly sliced
Combine all ingredients except scallions. Mix well. Add sliced scallions and mix. Form into eight 2-inch crab cakes.In a 10-inch skillet, melt butter over medium-high heat. Heat butter until hot but not smoking. Cook the crab cakes for 3 to 4 minutes on each side or until golden.

Maryland Crab Cakes

INGREDIENTS
1 pound crabmeat, shredded
1 1/2 tablespoons dry bread crumbs
2 teaspoons chopped fresh parsley
salt and pepper to taste
1 egg
1 1/2 tablespoons mayonnaise
1/2 teaspoon ground dry mustard
1 dash hot pepper sauce
DIRECTIONS
Preheat oven broiler.
Mix together crabmeat, bread crumbs, parsley, salt and pepper.
Beat together egg, mayonnaise, hot sauce and mustard. Combine with other ingredients and mix well. Form into patties and place on a lightly greased broiler pan or baking sheet.
Broil for 10 to 15 minutes, until lightly brown.

Take a large can of crab pieces, the most expensive of the cans, which run from 17 to 28 dollars depending on the parts. To it add mayo, about 1/2 cup, crab boil powder, dijon mustard, white wine, drop of lemon juice,chopped scallions, chopped red pepper, panko bread crumbs, fresh chopped parsley, mix very carefully. Shape into patties, toss with panko, freeze, fry. I worked in a gourmet deli, this is what we did. We got 5 dollars a pattiie.

INGREDIENTS
1 lb fresh lump crabmeat
1 egg
1 tablespoon Dijon mustard (optional)
2 tablespoons flour, more for dredging
2 tablespoons extra virgin olive oil
4 tablespoons butter
lemon wedges
salt and black pepper, freshly ground

PREP
Gently combine crab, egg, mustard, salt, pepper and 2 Tablespoons flour.
Cover; and put in freezer for 5 minutes.
Shape mixture into 4 hamburger-shaped patties.
Line plate with plastic wrap, and put crab cakes on it. Cover with more plastic wrap, and refrigerate for about 30 minutes (or as long as 1 day), or freeze for 15 minutes.
Put flour for dredging in a bowl.
Combine oil and butter in 12-inch skillet, and turn heat to medium.
When butter melts and its foam subsides, gently dredge a crab cake in flour.
Gently tap off excess flour; and add crab cake to pan; repeat with remaining crab cakes, and then turn heat to medium-high.
Cook, rotating cakes in pan as necessary to brown first side, 5 to 8 minutes.
Turn and brown other side (it will take slightly less time). Serve hot, with lemon wedges.

try using bay scallops as a binder. you blend them in a food processor and use instead of mayo. gives it a ggod flavor.
