This is for my wedding reception, so I would need enough for about 30 people....

Winning Lemon Bars

INGREDIENTS:
2 sticks (8 ounces) butter
2 cups flour
1/2 cup confectioners' sugar
4 beaten eggs
2 cups sugar
4 tablespoons flour
1/4 cup lemon juice
1 tablespoon finely grated lemon peel
sifted confectioners' sugar

PREPARATION:
Heat oven to 325°. Blend butter, 2 cups flour and 1/2 cup confectioners' sugar. Pat into ungreased 13x9x2-inch pan. Bake for 18 to 20 minutes. For filling, blend together eggs, sugar, 4 tablespoons flour, lemon juice, and lemon peel.

Pour over first layer. Return to oven and bake at 325° for 20 minutes. Loosen around edges, cut into bars and sift confectioners' sugar over the top while warm.

INGREDIENTS

* 2 cups sifted all-purpose flour
* 1 cup confectioners' sugar
* 1 cup butter, melted

* 4 eggs
* 2 cups white sugar
* 1 teaspoon baking powder
* 1/4 cup all-purpose flour
* 5/8 cup lemon juice

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
2. In a medium bowl, stir together 2 cups flour and confectioners' sugar. Blend in the melted butter. Press into the bottom of the prepared pan.
3. Bake in the preheated oven for 15 minutes, or until golden. In a large bowl, beat eggs until light. Combine the sugar, baking powder and 1/4 cup of flour so there will be no flour lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice. Pour over the prepared crust and return to the oven.
4. Bake for an additional 30 minutes or until bars are set. Allow to cool completely before cutting into bars.

****Double the recipe to feed 30****

Here's the recipe for 16 bars. It says DO NOT double ingredients to make more. Just make more than one batch. So I guess you'll need to make two batches. The recipe takes about an hour.

Ingredients
1 cup all-purpose flour
1/4 cup powdered sugar
1 tablespoon powdered sugar
1 teaspoon grated fresh lemon rind
1/4 cup reduced-calorie margarine
1 tablespoon reduced-calorie margarine
vegetable cooking spray
1 cup sugar
1/2 cup fat free egg substitute
1/4 cup fresh lemon juice

Prep
Combine flour, 1/4 cup powdered sugar, and lemon rind.
Cut in margarine with a pastry blender until mixture resembles coarse crumbs.
Press mixture into a 9-inch square pan coated with cooking spray.
Bake at 350° for 18 minutes.
Combine 1 cup sugar, egg substitute, and lemon juice, stirring well with a wire whisk.
Pour over baked crust.
Bake 25 additional minutes.
Let cool completely on a wire rack.
Sprinkle with remaining 1 tablespoon powdered sugar.
Cut into 16 bars.
Store in an airtight container.

Try this one-YUM!

2 C all purpose flour
2 sticks margarine or butter, softened
1/2 C Powdered sugar
2 C granulated sugar
4 tsp grated lemon peel (if desired)
4 TBSP lemon juice
1 tsp baking powder
1/2 tsp salt
4 large eggs
Powdered sugar

Heat oven to 350.
Mix flour, margarine, and powdered sugar. Press in ungreased pans (2 - 9x9x2) building up 1/2 inch edges.
Bake crust 20 minutes
Beat remaining ingredients (except powdered sugar) with electric mixer on high speed for about 3 minutes or until mixture is light and fluffy.
Pour over hot crust.
Bake 30 to 35 minutes or until no indentation remains when touched lightly in the center.
Cool in pan on wire rack. Dust with powdered sugar. Cut into 2 inch x 1 1/2 inch rectangles.
Enjoy!
Makes about 40-45 bars

2 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter, chilled
Topping
4 large eggs
1 1/2 cups sugar
1/4 cup flour
6 tablespoons fresh lemon juice
2 tablespoons freshly grated lemon zest
1 teaspoon baking powder
1/2 teaspoon salt
powdered sugar

For crust, mix together flour, sugar, and butter until crumbly.
Pat into bottom and 1/4-inch up sides of a buttered 9x13 inch baking pan. Bake in a 350°F oven for 15 to 20 minutes, or until lightly browned.
Meanwhile prepare topping. Beat eggs slightly.
In a separate bowl, stir together sugar and flour. Add to eggs. Beat well.
Add lemon juice, peel, baking powder, and salt. Beat until smooth.
Pour over baked crust. Return to oven and bake 25-30 minutes longer, or until just set.
Sprinkle with powdered sugar while hot. Let cool and cut into bars.
This recipe will make about 24 bars, so you may want to double the recipe just to make sure you have enough!

Time-Warp Lemon Squares

Ingredients (use vegan versions):

Crust:
1/4 cup granulated sugar
5 tablespoon margarine
1 cup all purpose flour
Filling:
Prepared equiv. of 3 eggs- substitute (I use Ener-G Egg Replacer)
3/4 cup granulated sugar
zest and juice of two fresh juicy lemons (three if on the dry side)
1 teaspoon real vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
3 tablespoon all purpose flour
powdered sugar (optional)

Directions:

Preheat oven to 350. Combine crust ingredients and press into 8 X 8 inch pan. Bake for 15 minutes. While baking, beat the egg substitute (follow directions of your brand) until foamy. Add the remainder of the ingredients (through flour) and mix together. Pour over the crust, and bake 20 minutes more, or until set. Cool. Sift powdered sugar on top, if you'd like, and enjoy the trip down memory lane!

Fancier version: Add a layer of vegan cream cheese mixed with a little powdered sugar over the baked crust before you pour in the filling. (You may have to cool the crust a bit before spreading the layer out.)

Serves: Makes 16 squares

Here's a recipe my kids just love..

Lemon Creme Bars
1 can sweetened condensed milk
1/2 cup lemon juice
1-1/2 cups flour
1 cup oatmeal
1 cup brown sugar
1 teaspoon baking powder
2/3 cup butter, melted
Preheat oven to 350 degrees F. In small bowl, combine sweetened condensed milk and lemon juice and mix well with wire whisk. Set aside. In large bowl, combine remaining ingredients and mix until crumbly. Press half of these crumbs into a 13" x 9" pan. Pour lemon mixture over and top with remaining crumbs. Bake for 25-35 minutes or until crumbs are light golden brown. Cool completely and chill before cutting into bars. Store in refrigerator

The best recipe I've found is the one in the box. I can't think of the name of the company, but it starts with a "K." It's better than any homemade kind...and I love to bake from scratch.
