That's a good question.
ANY cheese will A) dry out, and B) grow moldy fuzz if it's not kept in a very airtight container, in a cool place. The penicillium bacteria (very similar to medical penicillin) will continue to reproduce, and generate more "blue", if they have enough oxygen to survive. So, keep your cheese (whatever type) tightly wrapped in plastic wrap.
If the bleu cheese becomes more "blue" than cheese, it's time to throw it out. Not because the mold can hurt you (although it can give you hives, if you have a penicillin allergy), but because the cheese will smell and taste nasty.
