Affettati in cestino di pane - A bread bowl with salami & prosciutto
700 g (1,5 lb) simple bread dough
4 tablespoons dried chives
100 g (3 1/2 oz) boiled ham, sliced
100 g (3 1/2 oz) San Daniele or Parma ham (prosciutto crudo), sliced
100 g (3 1/2 oz) salami, sliced
6 little artichokes in oil
Prepare the simple bread dough following the instructions. Add 4 tablespoons dried chives to the ingredients. Let the dough rest in a warm place for about a couple of hours.
Preheat oven to 200°C (400°F). Divide the dough into three parts. Using a long pasta rolling pin, roll out one part of the dough on a lightly floured surface to a thickness of 2 cm (3/4 in). Using a pastry brush, oil the external base and side of a dish soufflé. Press the dough on the base and up the side of the dish. Try to shape in the best way the edge.
With the remaining dough create little round loaves or plaited ones.
Bake in the oven for about 15 minutes. This time is enough for your bread bowl; probably it is necessary more time for loaves.
Let the bread around the dish soufflé cool very well before removing it.
At this point arrange the rolled up slices of prosciutto and salami inside the bread bowl together with artichokes in oil.
Serve with loaves.
Fettuccine al profumo di caviale - Caviar-flavored pasta
50 g (1 3/4 oz) caviar
15 quail eggs
1 red and 1 yellow pepper (capsicum),grilled and skinned (also frozen)
2 young little onion (or 1/4 onion), finely chopped
2 tablespoons dried chives
8 tablespoons extra virgin olive oil
50 ml (2 fl oz - 1/4 C) dry white wine
Salt
250 g (8 1/2 oz) egg fettuccine
Boil the quail eggs for 3-4 minutes.
Prepare the sauce. Place the oil in a large saucepan; add the onion, the peppers cut into thin strips, chives and wine. Bring to the boil and cook over a low flame until the cooking sauce is reduced. Season with salt.
Shell the quail eggs and cut into halves. Plunging the cooked eggs into very cold water as they are cooked helps loosen the shell.
While you're cooking fettuccine, prepare a large bowl with caviar; mix the caviar with 4-6 tablespoons boiling water.
Drain fettuccine "al dente", transfer to the saucepan with pepper sauce, stir with a wooden spoon over a fierce heat.
Therein lies the secret: finish cooking the pasta in the sauce! Pour the pasta into the bowl, stirring gently, garnish with the quail eggs and serve immediately.
Pork Steaks Braised in Beer
Ingredients for 2
4 pork steaks
extra virgin olive oil, butter
1 sliced onion
1 clove of minced garlic
500 ml of beer
1 leave of laurel
1 tablespoon of flour melted in 2 tablespoons of water
salt, black pepper
Dress both sides of the steaks with salt and pepper.In a large pan pour some oil and add a little cube of butter and cook the steakd for 5 minutes each side, then leave them and store in a plate. Add a sliced onion, a minced garlic clove and brown them. Add beer, flour melted in water, a leave of laurel. Now put again the steaks in tha pan and continue to cook for 1 hour.
Dress every steak with the sauce.

Mom's Italian Spaghetti Sauce
Ingredients:
1 Cup chopped onion
1 Pound ground beef
2 Cloves garlic (minced)
1 1 lb. 14 oz. tomatoes (cut up)
1 1 lb. tomatoes cut up
1 6 oz. Can tomato paste
1/4 Cup snipped parsley
1 Tablespoon brown sugar
1 Teaspoon salt
1 1/2 Teaspoons dried oregano (crushed)
1/4 Teaspoon dried thyme (crushed)
1 Bay leaf
Shredded Parmesan cheese
Spaghetti noodles
In Dutch oven, combine onion, beef and garlic. Cook until meat is browned and onion is tender. Skim off excess fat. Add next 9 ingredients and two cups of water. Simmer uncovered three hours or until sauce is thick. Stir occasionally. Remove bay leaf. Serve over hot spaghetti. Pass a bowl of shredded parmesan cheese. Serves six.

well simplisity is the key here if its italian. Cook a 5 cousrse meal. appatizers, starter, main, desert, possibly cheese and biscuits then coffe and cream chocolates. look on www.epicurious for ideas. but if it is made by you it should be special to her anyway. Revolve it around a red theme as it is more passionate. you know red candles, red rose petals on the table and a single rose in a thin vase. generally chocolate, strawberries, pasta, shellfish, even beef are all good aphrodisiacs, so try add these to everything this should be good. Oh and make it extra special prepare a bath for her with scented candles and petals again allow her an hour this will also give you time to finish the dinner

Parmesan Chicken Wings
1 cup freshly grated Parmesan cheese, (Not shredded)
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon dried basil leaves
1 teaspoon salt
Freshly ground pepper to taste
2 pounds chicken wings, cut up
1/2 cup melted butter
Preheat oven to 375*F (190*C).
Combine Parmesan, parsley, basil, salt and pepper together and place in shallow bowl.
Dip each piece of chicken into the melted butter, then roll in the cheese mixture, coating well. Place on a greased baking sheet and bake for 45 minutes, turning about halfway when browned.
Serves 4 to 6.

OSSO BUCCO MILANESE (VEAL SHANKS WITH
ORZO)
1/4 c. oil
4 lb. veal shank, each cut 2 inches thick
1 lg. diced onion
2 celery stalks, diced
2 carrots, diced
1 clove garlic, minced
1 lg. can tomatoes
Chopped parsley
1/2 c. white wine
1/2 tsp. basil
Salt and pepper
Bay leaf
Brown pieces of veal in Dutch oven a few pieces at a time. Remove pieces. In drippings, cook onion, celery, carrots and garlic. Return veal to Dutch oven, add tomatoes and next five ingredients after all comes to boil. Reduce heat to low, cover and simmer 1 1/2 to 2 hours until fork tender. Serve with orzo (an Italian pasta) and vegetable of your choice.
Try it with a Barolo.

i am sorry i cannot think of any recipes but i had to comment on here. That is so romantic what you are doing. I am sure she will like it no matter what you make just to give her a break from cooking. Also light the candles to create a mood.
