sit on the floor and let him pull out all your pots and pans, and wooden spoons, plastics, etc. that's a blast for a toddler.
put some cheerios in a small plastic container then watch him figure how to get them out, screw the lid on very loosely, or see if it pops off easily-buy an inexpensive disposable camera so you will have memories of this day,

At 16 months old their attention span is very sport and they get bored easily, the beach offers a lot of variety (sand, water, walking, shells). If you don't live near a beach, the park is usually a great bet (swings, slides, climbing) and take a picnic lunch (just a sandwich, juice box and some crackers or cookies). You could also rent a bike with a child seat on the back and go for a ride thru the park. At the end of the fun stuff read some stories (go to the local library and ask the children's librarian for some good age appropriate books with lots of action and when reading, but effort into it - like you are acting it out or something). This child is too young to worry about having a blast! Why don't you concentrate on the satisfaction you will have spending time with them. Just make sure that the baby gets their rest and their eating schedules are maintained. You might take them to a place like gymboree if you want to do something special, but they don't know those things at that age, so just use the time for bonding and enjoying being in each other's company...
That will also bode well for future visitations. If the child comes back all crabby and out of sorts because it didn't sleep or eat on schedule, she'll remember that the next time.

He's only 16 months old so "having a blast" does not really fit into what stage he is in. Being a part of his life is the most important thing you can do and make him feel very secure (especially since it's been a long time) and comfortable. Trying to overcompensate by finding ways for him to "have a blast" may scare him. Give him time to feel safe and secure around you. We have a 16 mo old grandson and when he comes to visit without parents, this is what we do.

You've gotten lots of good answers already, I just wanted to chime in aggreeing that you need to make sure he gets enough sleep and enough to eat and isn't over-stimulated. A hungry, tired, or wired baby has no fun and is no fun. Other than that, my daughter loved the aquarium and the park when she was that age. Have a great time!

just spend time with him making him laugh and playing with him.. he is 16MO... there is not alot of major activities you can do with him.. try taking him to the park or the zoo..
