Scrambled eggs are pretty much done when there is no liquid egg left. If everything has developed a fluffy texture and perhaps even picked up a little golden brown, it is ready.
I know what you are referring to...Sometimes when cooking scrambled eggs, you will get a few pieces that seem to look a little greyish. This is normal and not bad for you. I have seen it in hard boiled eggs too. Can't tell you why, perhaps a science major could answer that.

Greyish blue probably means it is overcooked. I know that is a sign that a hard boiled egg has been overcooked. Scrambled eggs should be cooked over low heat until it's fluffy and soft and just a little moist. It will continue cooking from the residual heat, so it will be perfect when you start eating it.

grey/blue? the only colors you should see in scrambled eggs, are yellow, maybe a little white, and maybe a little brown from cooking.

grayish blue....hmmmm....never seen that before.....your suppose to cook them until they are still a little runny then turn the flame off it will cook the rest of the way by time you get them on the plate
