can I use only 2 eggs instead of 3? I only have two...just wondering if it'll make a difference.

Go ahead, it may make a bit of difference in the texture but not much. Most cakes take 2 (if you're making from a box) but with white to make more dense sometimes you use 3.

here is a recipe that only calls for 2 eggs and it tastes great!
Chocolate Cake
INGREDIENTS
1/2 cup milk
1/2 cup grated semisweet chocolate
1 1/2 cups white sugar
2 eggs
3/4 cup sour cream
1 teaspoon baking soda
1 tablespoon water
2 cups cake flour
1/2 cup butter, softened
DIRECTIONS
Preheat oven to 350 degree F (175 degrees C). Grease and flour one 9 x 13 inch pan.
Grate the chocolate. In a small saucepan, boil the milk and chocolate until mixture forms a custard.
Cream the butter or margarine and sugar. Add eggs and sour cream to the creamed mixture.
Dissolve the baking soda in water, and add to the creamed mixture. Add the flour, and mix thoroughly. Add the chocolate mixture and beat well. Pour into a greased and floured 9x13 inch pan.
Bake at 350 degrees F (175 degrees C) for 40 minutes to one hour.

Go ahead. Most recipes call for the use of medium eggs but most people buy large eggs. Most home cooks add more egg that most recipes call for anyway.

If you're still concerned, add a little extra baking powder or baking soda.

a great substitute is for eggs is mayonaise. it is great and makes cake lighter

It will be fine. It might not be quite as high or fluffy, but it will still taste good.
