The exact variety or varieties of locust that are considered kosher are unknown today, although some communities of Jews isolated in arab countries for many centuries claim a tradition that certain varieties are kosher and they are permitted to eat them, if they wish. For the rest of us, locust is off the menu until Eliyahu Hanavi comes and straightens us out.
