Oven Baked Potato Wedges
INGREDIENTS
2 teaspoons olive oil
5 large russet potatoes, peeled and cut into wedges
1/2 cup melted butter
1 cup seasoned bread crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with the olive oil.
Brush potato wedges with butter, and roll in bread crumbs. Place wedges on prepared baking sheet.
Bake in preheated oven for 20 minutes. Remove from oven and turn wedges; cook for 10 to 15 minutes, or until tender

OR

Mashed Potato Casserole
INGREDIENTS
1 cup milk
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package onion dip
2 eggs, beaten
2 cups water
1/2 cup margarine
1 teaspoon salt
3 cups instant mashed potato flakes
2 tablespoons margarine
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease one 2 1/2 quart casserole dish.
Blend together milk, cream cheese, onion dip and eggs.
In a saucepan over medium heat, combine water, margarine and salt. Bring to a boil and add instant potato mix; mix well. Add cream cheese mixture, mix well and pour into prepared dish.
Dot the top with margarine and bake at 350 degrees F (175 degrees C) for 30 to 45 minutes.

Fried Potatoes

2 lbs potatoes(you can go up or down depending on # you are feeding)
1 stick of butter
Minced onion, salt, pepper - season to taste


Peel and chunk potatoes. Melt one stick of butter in an electric skillet @ 35o degrees, add potatoes, minced onion, salt & pepper. Cover w/ lid and stir occasionally. Cook for approx. 30-45 mins or until potatoes are brown and tender!

Cheesy potatoes

1 30 oz bag hashbrowns
1 can cream of chicken soup
2 cups your fav cheese
1 8 oz. sour cream

Mix all above indredients together, place in greased 9x13 pan. Cover w/ alumium foil and bake @ 400 degrees for about 45 minutes, remove foil and bake an additional 15 minutes

Fattening but worth it, great with ham.

8 potatoes peeled and cut in 1/2 in. cubes
1 can cream of chicken soup*
1 8oz container sour cream*
1 small onion chopped
1 1/2 c cheddar cheese grated
s & p

combine soup and sour cream, 1 c of cheese in a greased 2 qt baking dish season s & p to taste mix in potatoes and top w/ 1 /2 c cheese. bake in a 350 deg oven for 45 mins.

* May use reduced fat versions

1 lb. baking potatoes, cut into cubes (about 3 cups)
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup milk
3 slices OSCAR MAYER Bacon, cooked, crumbled and divided
1 cup KRAFT Shredded Cheddar Cheese, divided
2 Tbsp. sliced green onions, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream



PLACE cubed pototoes in large microwaveable bowl; microwave on HIGH 5 min., stirring after 2-1/2 min. Add broth and milk to bowl; stir. Microwave on HIGH 10 min., stirring after 5 min. Crush potatoes with a potato masher.
RESERVE 2 Tbsp. each of the bacon and cheese and 1 Tbsp. of the onions for topping; set aside. Add remaining bacon, cheese and onions to soup.
SERVE topped with reserved bacon, cheese, onions and sour cream.

Serving Suggestion
Serve this hearty soup with a quick bagged green salad tossed with your favorite KRAFT Dressing and a whole-wheat roll.

GERMAN FRIED POTATO PANCAKES

5 lbs. potatoes
2 lg. sweet onions
2 lg. eggs
1/2 c. self-rising flour
Salt & pepper to taste

Grate potatoes and onions together. Pour off excess juice, mix in eggs then add enough flour to thicken. Salt and pepper to taste. In large iron skillet, heat cooking oil; drop mixture into hot oil (about 2 inches pancakes). Brown to crisp on both sides. Serve hot.
