They always seem to end up a bit rubbery when I try to cook them. Should I marinade?

Great tuna should be seared ever-so lightly on both sides and be done with it. I see too many people waiting to long for the first flip.

The first side should go for about a minute. Flip and let the 2nd side go half as long.

You can marinade if you wish. It will add flavor, but if I'm spending money on great tun filets, I want to taste the tuna, not some acid from a marinade.

High and fast. That's the best! Enjoy! :o)

It's actually relatively safe to have tuna slightly raw. Personally I believe the rawer the better. If you are searing the tuna, watch the sides of the tuna to see the color changes. It shouldn't cook too high up, maybe about 2-3 mm of color change before you flip it over and do the same. You can do a nice ceviche where you literally cook the tuna in lime or lemon marinade. Or you could do a pre-marinade with a vinaigrette or teriyaki marinade. If you plan on any oven usage, make sure you apply a light coating of oil on the outsides before popping it in.

Cook them on a Griddle and lightly sear them on both sides, so the fish is pink in the middle (dont worry its perfectly safe to eat Tuna slightly raw)

Tuna steaks take literally seconds to cook. You are only meant to seal the outside if them in the pan, when you cut into them they should still be red in the middle.
I think you are cooking them too long

Yes, put them in a marinade of olive oil, garlic, sea salt and freshly gound black pepper with a twist of lime before cooking.

Rockin' is right - you want to go for searing not cooking.

You get a flat pan really, really hot. No oil and then just a minute or two each side for the tuna.

Try it with really butter mash - it's wonderful!

I do them on a griddle with a touch of olive oil. Get the griddle really really smoking hot, then the tuna needs about 2 minutes wach side. Its beautiful.
i do mine with rice and an onion and tomato salsa.
Its such a lovely summery meal, reminds me of summer holidays in the sun!

I marinate mine in a bit of soya sauce chili an some olive oil for about two hours, then i sprinkle a bit of salt an sugar an brush them with some more olive oil then i grill them this seems to keep them more juicier then if you fry them frying dries them out an makes them chewy.

marinading sounds like a good idea: mabye with some lime juice mmm

or you could just lightly steam them in a pan with a lid firmly on.

just dont put it in the grill cook it on a lean mean fat grilling machine or a pan with oil simple as that or cover the steak with a lid when cooking it
