One popular theory is that our brains are like computer hard drives. Throughout the day we gather tons of information that we don't want like a video recorder going non-stop. Dreams are just your brain clearing out the useless information at night.
We humans are so trained and good at picking out patterns we often pick out patterns that aren't really there (like the face on the surface of the moon). So we often gather the random images in our dreams into story lines that aren't really there. If something's on your mind or you're obsessed with something, you will put that theme into your dream.

If dreams are going to happen, they'll happen. I don't think we can remember all the dreams we have to take them to when we are awake. I can predict, though, that when I eat chili dogs I'm going to have either a nightmare or a wild and crazy dream of some kind, like driving my bright blue sports car (no, I don't really have one) over a cliff. Kind of like in "Thelma and Louise."

You are always dreaming. Have you ever heard of REM sleep? Rapid Eye Movement. You always dream but sometimes never know it. I got this out of a book although I forget the title......
